Creamless Mushroom Soup

Ingredients
- 2 Tbsp butter
- 1 c carrots
- 1 c onions
- 1 c leeks
- 12 c celery
- 1 tsp thyme
- 2 lb mushrooms
- 2 c chicken stock
- 4 tsp salt or salt to taste
- pepper to taste optional
Directions
- Saute vegetables in butter
- Saute mushrooms until just tender
- Add stock and spices
- Pour in food processor or blender and quickly chop the vegetables until it looks creamy
- Reheat and serve
