Creamy Carrot Casserole

Ingredients

  • 1 12 lb carrots peeled and sliced or 20 oz frozen sliced and thawed
  • 1 c mayonnaise
  • 1 Tbsp grated onion
  • 1 Tbsp prepared horseradish
  • 14 c shredded Cheddar cheese
  • 2 Tbsp buttered bread crumbs

Directions

  1. In saucepan cook carrots just until crisp-tender
  2. Drain reserving 14 cup liquid
  3. Place carrots in 1 12-quart baking dish
  4. Combine mayonnaise onion horseradish and reserved cooking liquid
  5. Spread evenly over carrots
  6. Sprinkle with cheese
  7. Top with bread crumbs
  8. Bake uncovered at 350 for 30 minutes
  9. Yields 8 to 10 servings
