Creamy Carrot Casserole

Ingredients
- 1 12 lb carrots peeled and sliced or 20 oz frozen sliced and thawed
- 1 c mayonnaise
- 1 Tbsp grated onion
- 1 Tbsp prepared horseradish
- 14 c shredded Cheddar cheese
- 2 Tbsp buttered bread crumbs
Directions
- In saucepan cook carrots just until crisp-tender
- Drain reserving 14 cup liquid
- Place carrots in 1 12-quart baking dish
- Combine mayonnaise onion horseradish and reserved cooking liquid
- Spread evenly over carrots
- Sprinkle with cheese
- Top with bread crumbs
- Bake uncovered at 350 for 30 minutes
- Yields 8 to 10 servings
