Creamy Cauliflower Soup

Ingredients
- 1 12 c potato chunks no peels
- 4 c light broth or water
- 1 14 c chopped pale celery
- 5 c cauliflower pieces 1 head
- 1 small onion
- 1 whole garlic clove
- 1 Tbsp olive oil or butter
- 12 c dry white wine
- 1 tsp salt
- pinch of pepper
- parsley sprigs garnish
Directions
- Cook potatoes in broth
- Chop celery and add
- When potatoes are almost done add cauliflower and cook until tender
- The potatoes must be very well cooked otherwise soup will be gluey
