Creamy Hash Browns

Ingredients

  • 6 Tbsp bacon drippings or butter
  • 6 c diced raw potatoes
  • 1 medium size onion chopped 12 c
  • 1 tsp salt
  • 14 tsp pepper
  • 1 small can evaporated milk

Directions

  1. Melt drippings or butter in large frying pan stir in potatoes onion salt and pepper
  2. Cover cook over low heat 10 minutes
  3. Uncover stir from bottom of pan then saute over low heat turning often for 15 minutes
  4. Pour evaporated milk over heat stirring gently 1 to 2 minutes longer
  5. Serves 6
