Creamy Peach Pudding

Ingredients

  • 1 c diced fresh peaches or drained canned peaches
  • 12 c creamed cottage cheese
  • 12 c low-fat plain yogurt
  • 1 Tbsp honey
  • 12 tsp vanilla

Directions

  1. Arrange fruit in the bottom of a shallow 1-quart serving dish Place remaining ingredients in an electric blender
  2. Cover and blend at medium speed 10 seconds or until smooth and creamy
  3. Pour sauce over fruit and stir gently to mix
  4. Cover and refrigerate 3 hours or overnight
  5. Makes 4 servings
