Creamy Rice PuddingYields 32 Four-Ounce Portions

Ingredients
- 1 lb rice
- 1 lb sugar
- 4 qt milk
- 8 egg yolks
- 2 oz vanilla
- 1 qt heavy cream
Directions
- In a heavy-gauge pot over moderate heat combine rice sugar and milk
- Cook until rice is tender approximately 45 minutes When rice is cooked remove pot from stove and gradually incorporate eggs
- Return to heat and cook thoroughly
- Add vanilla and pour into Bain Marie
- Chill overnight
