Creamy Vegetable Soup

Ingredients

• 1 large onion chopped
• 14 c butter
• 3 medium sweet potatoes peeled and chopped
• 3 medium zucchini chopped
• 1 bunch broccoli chopped
• 2 qt chicken broth
• 2 medium potatoes peeled and shredded
• 1 tsp celery seed
• 1 to 2 tsp ground cumin
• 2 tsp salt
• 1 tsp pepper
• 2 c light cream or milk

Directions

1. In a large kettle saute onion in butter until transparent not browned
2. Add the sweet potatoes zucchini and broccoli
3. Saute lightly for 5 minutes or until crisp-tender
4. Stir in broth Simmer for a few minutes
5. Add potatoes and seasonings
6. Cook another 10 minutes or until vegetables are tender
7. Stir in cream milk and heat
8. Makes about 4 quarts
