Creamy Vegetable Soup
Ingredients
- 1 large onion chopped
- 14 c butter
- 3 medium sweet potatoes peeled and chopped
- 3 medium zucchini chopped
- 1 bunch broccoli chopped
- 2 qt chicken broth
- 2 medium potatoes peeled and shredded
- 1 tsp celery seed
- 1 to 2 tsp ground cumin
- 2 tsp salt
- 1 tsp pepper
- 2 c light cream or milk
Directions
- In a large kettle saute onion in butter until transparent not browned
- Add the sweet potatoes zucchini and broccoli
- Saute lightly for 5 minutes or until crisp-tender
- Stir in broth Simmer for a few minutes
- Add potatoes and seasonings
- Cook another 10 minutes or until vegetables are tender
- Stir in cream milk and heat
- Makes about 4 quarts
