Creole Muffins
Ingredients
- 1 14 c flour
- 2 tsp baking powder
- 12 tsp salt
- 4 Tbsp sugar
- 1 14 c corn meal
- 3 eggs beaten
- 34 c milk
- 1 c water
- 12 c oil
- 1 12 tsp butter
- 12 c bell pepper chopped
- 1 Tbsp hot pepper chopped
- 2 Tbsp onion grated
- 1 small jar pimiento chopped
- 2 c grated Cheddar cheese
Directions
- Sift flour baking powder salt sugar and corn meal together Combine eggs and milk and add to dry ingredients stirring only enough to moisten
- Add oil butter peppers onion pimiento and cheese
- Combine stirring only enough to moisten
- Do not overstir
- Place in greased muffin tins Bake at 400 for 20 to 25 minutes
- Makes 3 12 to 4 dozen
