Creole Muffins

Ingredients

  • 1 14 c flour
  • 2 tsp baking powder
  • 12 tsp salt
  • 4 Tbsp sugar
  • 1 14 c corn meal
  • 3 eggs beaten
  • 34 c milk
  • 1 c water
  • 12 c oil
  • 1 12 tsp butter
  • 12 c bell pepper chopped
  • 1 Tbsp hot pepper chopped
  • 2 Tbsp onion grated
  • 1 small jar pimiento chopped
  • 2 c grated Cheddar cheese

Directions

  1. Sift flour baking powder salt sugar and corn meal together Combine eggs and milk and add to dry ingredients stirring only enough to moisten
  2. Add oil butter peppers onion pimiento and cheese
  3. Combine stirring only enough to moisten
  4. Do not overstir
  5. Place in greased muffin tins Bake at 400 for 20 to 25 minutes
  6. Makes 3 12 to 4 dozen
