Creole Rice
Ingredients
- 2 10 oz cans tomatoes with green chiles undrained
- 1 12 c water
- 2 Tbsp butter or margarine
- 1 tsp garlic powder
- 12 tsp dried parsley flakes
- 12 tsp dried whole oregano
- 14 tsp salt
- 12 c chopped green pepper
- 12 c chopped green onions
- 1 c uncooked rice
Directions
- Drain tomatoes reserving 1 cup juice
- Combine juice water and next 5 ingredients in a large saucepan
- Bring to a boil add vegetables and rice
- Cover reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed
- Yield 4 to 6 servings
