Creole Rice

Ingredients

  • 2 10 oz cans tomatoes with green chiles undrained
  • 1 12 c water
  • 2 Tbsp butter or margarine
  • 1 tsp garlic powder
  • 12 tsp dried parsley flakes
  • 12 tsp dried whole oregano
  • 14 tsp salt
  • 12 c chopped green pepper
  • 12 c chopped green onions
  • 1 c uncooked rice

Directions

  1. Drain tomatoes reserving 1 cup juice
  2. Combine juice water and next 5 ingredients in a large saucepan
  3. Bring to a boil add vegetables and rice
  4. Cover reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed
  5. Yield 4 to 6 servings
