Creole Sauce
Ingredients
- 14 lb beef fat
- 12 lb celery sliced
- 12 lb onion sliced
- 34 Tbsp garlic salt
- 34 c granulated sugar
- 12 Tbsp black pepper
- 12 Tbsp thyme
- 34 Tbsp salt
- 1 10 oz can tomato puree
- 12 lb green peppers sliced
- 1 12 c fish broth
- 14 c cornstarch
- 14 pt red Burgundy
- 14 Tbsp Tabasco sauce
- 12 lb cooked cod
- 12 lb shrimp
Directions
- Melt fat
- Add celery and onions
- Saute on medium heat for 5 minutes
- Add seasonings and mix
- Add tomatoes and green peppers and fish broth
- Bring to a boil
- Dissolve cornstarch and wine until smooth
- Add to ingredients and bring to boil
- Add Tabasco sauce and simmer 20 minutes
- Add cod and shrimp to ingredients Cook until hot
- Yields 1 12 gallons
