Crispy Ginger Chicken And PeachesMakes 6 Servings

Ingredients
- 1 broiler-fryer about 2 12 lb
- 14 c yellow cornmeal
- 14 c all-purpose or whole wheat flour
- 1 tsp ground ginger
- 1 tsp salt
- 1 tsp sugar
- 1 tsp paprika
- 12 tsp onion salt
- 14 tsp garlic salt
- 14 to 13 c milk
- 1 16 oz can sliced peaches drained
- 2 Tbsp soy sauce
- 1 tsp packed brown sugar
- 18 tsp ground ginger
Directions
- Cut chicken into 6 serving size pieces
- Mix cornmeal flour the 1 teaspoon ginger salt sugar paprika onion salt and garlic salt
- Dip chicken into milk coat with cornmeal mixture
- Place skin side up in a 13 x 9 x 2-inch baking pan
- Bake uncovered in a hot oven 400 for 50 minutes
