Crispy Ginger Chicken And PeachesMakes 6 Servings

Ingredients

  • 1 broiler-fryer about 2 12 lb
  • 14 c yellow cornmeal
  • 14 c all-purpose or whole wheat flour
  • 1 tsp ground ginger
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp paprika
  • 12 tsp onion salt
  • 14 tsp garlic salt
  • 14 to 13 c milk
  • 1 16 oz can sliced peaches drained
  • 2 Tbsp soy sauce
  • 1 tsp packed brown sugar
  • 18 tsp ground ginger

Directions

  1. Cut chicken into 6 serving size pieces
  2. Mix cornmeal flour the 1 teaspoon ginger salt sugar paprika onion salt and garlic salt
  3. Dip chicken into milk coat with cornmeal mixture
  4. Place skin side up in a 13 x 9 x 2-inch baking pan
  5. Bake uncovered in a hot oven 400 for 50 minutes
