Crock-Pot Chili

Ingredients

  • 1 lb ground beef
  • 1 c dry cleaned kidney beans
  • 1 c dry cleaned pinto beans
  • 1 medium onion chopped
  • 1 green pepper chopped
  • 3 cloves garlic minced
  • 5 c tomatoes skinned and chopped in food processor
  • 1 tsp salt
  • 2 tsp chili powder
  • 1 12 tsp cumin
  • grated Cheddar cheese

Directions

  1. Brown ground beef and drain thoroughly
  2. Combine remaining ingredients except cheese in crock-pot
  3. Add beef
  4. Add water until crock-pot is 23 full
  5. Cook on low at least 5 hours
  6. Top with grated cheese and serve with corn muffins
  7. Yield 6 servings
