Crunchy Baked Chicken

Ingredients

  • 14 c butter or margarine
  • 14 tsp pepper
  • 1 2 12 to 3 lb frying chicken cut up
  • 14 tsp seasoned salt
  • 12 c cornflake crumbs

Directions

  1. Place butter in a 2-quart glass baking dish Microwave at 70 power 1 12 to 2 minutes until melted
  2. Combine salt and pepper with cornflake crumbs
  3. Roll chicken in the melted butter then in the seasoned crumbs
  4. Place the chicken pieces skin side up with the thick edges toward the outside of the dish Microwave uncovered 6 to 7 minutes per pound
  5. Turn the dish halfway through the cooking time
  6. Let stand 3 minutes before serving
