Crunchy Chicken Salad
Ingredients
- 2 c brown rice cooked and cooled
- 4 c diced cooked chicken
- 1 can water chestnuts drained
- 1 c chopped celery
- 12 c sliced black olives
- 1 can pineapple tidbits drained
- seasoned salt
- 12 c fat-free mayonnaise
Directions
- Combine all ingredients except salt and pineapple
- Chill several hours
- Serve salad on a bed of lettuce
- Sprinkle with seasoned salt
- Top with pineapple tidbits
