Crunchy Vegetable Cheese Ball
Ingredients
- 1 c shredded carrots
- 1 8 oz pkg light cream cheese softened
- 1 c 4 oz shredded 40 less fat Cheddar cheese
- 1 tsp instant minced onion
- 1 c fresh broccoli finely chopped
- assorted crackers
Directions
- Press shredded carrots between paper towels to remove excess moisture set aside
- In large bowl combine cheeses and minced onion
- Stir in shredded carrots and broccoli
- Cover tightly Refrigerate at least 2 hours
- Shape mixture into a ball wrap with plastic wrap
- Makes one cheese ball
