Cucumber Mousse
Ingredients
- 2 tsp gelatin
- 3 Tbsp cold water
- 2 tsp vinegar or water
- 1 tsp grated onion
- 34 tsp salt
- 14 tsp paprika
- 1 c pared seeded chopped cucumbers
- 12 c before whipping whipped cream
Directions
- Dissolve gelatin in cold water
- Put over heat and add vinegar onion salt and paprika
- Chill until about to set
- Beat the gelatin mixture into the stiffly whipped cream
- Fold in the cucumbers
- Rinse individual molds fill them with mousse
- When they are thoroughly chilled invert them onto a garnished plate Serves 4
