Cucumber Pickle Relish
Ingredients
- 7 c coarsely grated cucumbers with skins on any size except real large ones
- 1 c chopped green pepper
- 1 c chopped onion
- 1 Tbsp salt
- 1 c brown vinegar
- 2 c sugar
- 12 tsp dill seed
- 12 tsp celery seed
Directions
- Mix by hand and put in jars
- Makes 2 quarts
- Cover with lids not sealed and tighten and then loosen a little
- Pickles will work a little so it needs a little working space
- Refrigerate Will keep up to a year
