Cucumber Soup

Ingredients
- 1 can chicken broth
- 4 peeled and seeded large diced cucumbers
- 12 to 15 diced scallions tops included
- 34 c heavy cream
- salt and pepper to taste
Directions
- Boil broth
- Add cucumbers and onions
- Simmer 10 minutes Puree in blender with cream
- Chill well
- Season prior to serving
- Sour cream or dill garnish may be added
- This soup is better if made a day ahead
