Cupcake Banana Bread
Ingredients
- 2 eggs
- 23 c margarine
- 1 12 c sugar
- 1 12 c flour plain
- 2 tsp baking powder
- 14 tsp salt
- 4 Tbsp milk
- 1 c mashed very ripe bananas
- 34 c chopped pecans
- 1 tsp vanilla
Directions
- Let margarine and eggs come to room temperature before creaming them with sugar
- Mix flour baking powder and salt and add to creamed mixture alternating with milk
- Add mashed bananas nuts and vanilla then pour into a greased muffin tin Can be made into a loaf using greased 8 x 13-inch loaf pan
- Bake 25 minutes at 350
- Bake 45 minutes for loaf
- Makes about 2 dozen cupcakes
