Curried Chicken Rice Salad

Ingredients
- 1 tsp. vinegar
- 2 tsp. salad oil
- 1/2 tsp. curry powder
- 1/4 c. minced onion
- 1 1/2 c. cooked white rice
- 2 c. cooked and chopped chicken breasts
- 1/2 c. almonds, slivered
- 1 c. celery, chopped
- 3/4 c. mayonnaise
- 1 tsp. salt
- 1/8 tsp. black pepper
- 1/2 c. green pepper, chopped
Directions
- Mix vinegar, oil and curry powder together as a dressing. Toss in onion and rice.
- Refrigerate overnight or 24 hours.
- To rice mixture, add all other ingredients and mix well.
- Chill at least 1 hour.
- Serves 5 to 6.
