Curry Rice

Ingredients

  • 2 pork chops trimmed and cubed
  • 1 large onion chopped
  • 4 large carrots sliced
  • 2 large potatoes sliced
  • 1 large green pepper chopped
  • 9 Tbsp flour
  • 1 c water
  • 2 Tbsp curry powder
  • cooked rice

Directions

  1. In large pan simmer pork chop cubes in salted water enough to cover 45 to 60 minutes
  2. Add more hot water enough to make as much curry as you want then put in onions carrots and potatoes Salt and pepper to taste
  3. Bring to boil lower heat and simmer 2 hours stirring occasionally covered
  4. Add the green pepper and simmer another 15 minutes
  5. Add flour to water to make sauce for thickening
  6. Stir into vegetables
  7. Add curry powder
  8. Serve over regular cooked rice not instant
  9. Leftovers freeze nicely
