Date Pinwheel Cookies

Ingredients

  • 1 lb pitted dates chopped
  • 1 c finely chopped nuts
  • 1 egg beaten
  • 12 c brown sugar
  • 12 tsp salt
  • 12 tsp soda
  • 12 c water
  • 12 c white sugar
  • 12 c oleo
  • 12 tsp vanilla
  • 2 c sifted flour

Directions

  1. Cook dates in water a few minutes stirring constantly
  2. Set aside and let cool
  3. When cool add nuts
  4. Thoroughly cream sugar and oleo add egg and beat well
  5. Add vanilla and sifted dry ingredients and mix
  6. Knead dough divide in half roll one part on floured board 14-inch thick in a rectangular shape
  7. Spread half of date mixture all over the dough and roll like a jelly roll wrap in waxed paper and chill in refrigerator overnight
  8. Repeat with the remaining dough and filling
  9. Cut in 14-inch slices and place on greased cookie sheet
  10. Bake in 400 oven 8 to 10 minutes
