Date Pinwheel Cookies
Ingredients
- 1 lb pitted dates chopped
- 1 c finely chopped nuts
- 1 egg beaten
- 12 c brown sugar
- 12 tsp salt
- 12 tsp soda
- 12 c water
- 12 c white sugar
- 12 c oleo
- 12 tsp vanilla
- 2 c sifted flour
Directions
- Cook dates in water a few minutes stirring constantly
- Set aside and let cool
- When cool add nuts
- Thoroughly cream sugar and oleo add egg and beat well
- Add vanilla and sifted dry ingredients and mix
- Knead dough divide in half roll one part on floured board 14-inch thick in a rectangular shape
- Spread half of date mixture all over the dough and roll like a jelly roll wrap in waxed paper and chill in refrigerator overnight
- Repeat with the remaining dough and filling
- Cut in 14-inch slices and place on greased cookie sheet
- Bake in 400 oven 8 to 10 minutes
