Day-Ahead Salad

Ingredients

  • 1 head lettuce
  • 1 pkg frozen tiny peas
  • 1 c celery chopped
  • 1 small 2 14 oz can sliced black olives
  • 34 c onion thinly sliced or chopped
  • 1 12 c mayonnaise
  • grated Parmesan cheese

Directions

  1. Tear lettuce in pieces
  2. Cook and drain peas
  3. Layer vegetables in a large salad bowl
  4. Spread a layer of mayonnaise sealing the lettuce
  5. Make a second layer of vegetables
  6. Seal with mayonnaise
  7. Top with Parmesan cheese and then black olives Cover tightly with Saran Wrap and refrigerate overnight
  8. Toss before serving
  9. Serves 6 to 8
