Deep Fried Onion Rings

Ingredients

  • 2 medium onions
  • 1 slightly beaten egg
  • 1 c milk
  • cooking oil for deep fat frying
  • 3 Tbsp cooking oil
  • 1 c plus 2 Tbsp flour
  • 12 tsp salt

Directions

  1. Peel and cut onions into 12-inch thick slices
  2. Separate into rings and set aside
  3. In a medium bowl combine beaten egg milk and oil
  4. Blend in flour and salt just until moistened
  5. Fill deep fat fryer or a 2 to 3-quart saucepan with cooking oil
  6. Heat oil to 375
  7. Using a fork dip onion rings one at a time in batter to cover
  8. Let excess drip back into bowl
  9. Working quickly place each ring in the hot oil
  10. Fry rings a few at a time about 2 to 3 minutes or until golden brown turning once with a fork to separate rings
  11. Remove from oil
  12. Great batter to fry okra or squash also
