Deer Sausage

Ingredients

  • 6 lb deer coarsely ground
  • 4 lb pork fat fresh ground
  • 2 Tbsp red cayenne pepper dried and crushed
  • 1 Tbsp nutmeg
  • 1 tsp ginger
  • 3 tsp sage

Directions

  1. Grind all ingredients together two maybe three times
  2. Mix well
  3. Put in covered container in refrigerator for about three days so flavors can blend
  4. Divide into 10 1-pound packages and freeze
  5. Yields 10 pounds
