Deli-Style Italian Pasta Salad
Ingredients
- 1 7-oz package Rotelle pasta large spirals or ziti cut tubes
- 6 oz provolone cheese cut into 34 -inch cubes
- 6 oz Genoa salami cut into strips
- 1 small zucchini thinly sliced
- 1 small onion thinly sliced and separated into rings
- 12 c chopped green or red sweet pepper
- 1 2- 14- oz can sliced pitted ripe olives drained
- 14 c grated Parmesan cheese
- 14 c snipped fresh parsley
- 13 c olive oil
- 14 c white wine vinegar
- 1-12 Tsp dry mustard
- 1 Tsp dried oregano crushed
- 1 Tsp dried basil crushed
- 2 medium tomatoes cut into wedges
- Parsley sprigs optional
Directions
- Cook pasta according to package directions drain
- Rinse with cold water and drain again
