Delicious Dove Casserole

Ingredients

• 4 c diced cooked breasts of dove
• 1 10 oz can chicken consomme
• 2 12 Tbsp all-purpose flour
• 23 c cream
• 23 c bread crumbs
• 6 Tbsp butter
• 23 c chopped green pepper
• 23 c chopped onion
• 2 Tbsp chopped parsley
• 12 tsp ground sage
• 12 tsp salt
• freshly ground black pepper
• 2 oz sherry wine

Directions

1. Cook whole doves in chicken consomme until tender
2. Remove breasts and dice meat
3. Measure 4 cups and set aside
4. Blend 3 tablespoons butter with flour and cream Saute bread crumbs green pepper onion parsley and sage in remaining 3 tablespoons butter Mix the sauteed ingredients flour mixture and dove meat
5. Place in skillet Add salt pepper and sherry
6. Let cook gently for 25 or 30 minutes
