Deluxe German Potato Salad
Ingredients
- 12 lb sliced bacon
- 1 c thinly sliced celery
- 1 c chopped onion
- 1 c sugar
- 2 Tbsp all-purpose flour
- 1 c vinegar
- 12 c water
- 1 tsp salt
- 34 tsp dry mustard
- 5 lb unpeeled red potatoes cooked and sliced
- 2 carrots shredded
- 2 Tbsp finely chopped parsley
Directions
- In a skillet cook bacon until crisp
- Drain crumble and set aside
- In the drippings saute celery and onions until tender Combine sugar and flour
- Add to skillet with vinegar water salt and mustard
- Cook stirring constantly until mixture thickens
- In a large bowl combine potatoes carrots parsley and bacon
- Pour the sauce over the potato mixture and stir gently to coat
