Depression Days Vegetable Salad

Ingredients

  • 1 cucumber chopped
  • 1 medium onion diced
  • 2 medium tomatoes diced
  • 2 tsp salt
  • 1 Tbsp vinegar
  • 1 c water

Directions

  1. Mix salt vinegar and water and pour over vegetables and let marinate a couple of hours or overnight
  2. More salt and vinegar can be added to suit taste
