Diabetic Apple Pie

Ingredients

  • 6 pared sliced apples
  • 1 6 oz can frozen apple juice
  • 2 Tbsp cornstarch
  • 12 c water
  • 12 tsp cinnamon
  • 12 tsp nutmeg
  • 2 Tbsp butter
  • 2 unbaked pie crusts

Directions

  1. Fill pie shell with sliced apples
  2. Heat apple juice to boiling
  3. Dissolve cornstarch in water
  4. Stir into hot juice Cook until thick
  5. Add spices to juice mixture and pour over apples
  6. Dot with butter
  7. Cover with top crust
  8. Bake at 425 for 45 minutes
