Diabetic Baked Chicken

Ingredients
- 5 leg quarters or 4 breasts skinned
- 3 medium potatoes cut 12 to 14-inches
- 1 small onion chopped
- salt and pepper to taste
- garlic salt
- 12 pkg saltine crackers or salt free
- water
Directions
- Put in large glass pan in oven cook until tender
- Turn as needed at least once during cooking
- Put cracker crumbs on chicken and add enough water to cover chicken it makes its own gravy
- Put back in oven until done
- Cook on 425
