Diabetic Chocolate Chip Cookies
Ingredients
- 1 c diet margarine at room temperature
- 14 c sugar
- 14 c brown Sugar Twin
- 3 large egg whites at room temperature
- 1 Tbsp vanilla
- 2 c plain flour
- 1 tsp baking powder
- 14 tsp salt
- 14 c water at room temperature
- 12 c mini semi-sweet chocolate chips
Directions
- Preheat oven to 375
- Cream margarine sugar and brown Sugar Twin at medium speed until light and fluffy
- Add egg whites and vanilla to cream mixture and beat at medium speed for 1 minute Stir together flour soda and salt to blend well
- Add water to creamed mixture along with flour mixture and mix at medium speed for 1 minute or until smooth
- Add chocolate chips to dough and mix lightly
- Drop by tablespoonful onto cookie sheet that has been lined with foil or sprayed with no-stick spray
- Press down lightly with fingers dipped into cold water to form a circle
