Diabetic Cupcakes

Ingredients
- 1 c water
- 1 c raisins
- 1 c unsweetened applesauce
- 2 eggs
- artificial sweetener to equal 1 c sugar
- 34 c oil
- 1 tsp baking soda
- 2 c flour
- 1 12 tsp cinnamon
- 12 tsp vanilla
- 12 tsp salt
Directions
- Cook raisins in water until they are soft
- Drain Add applesauce eggs sweetener and oil
- Mix well Blend in baking soda flour and remaining ingredients Bake at 350 about 19 minutes
- One cupcake equals 1 fruit and 1 fat
