Diabetic Fruit Cake

Ingredients

• 34 c oil
• 1 12 c unsweetened applesauce
• 1 egg
• 2 Tbsp liquid sweetener
• 2 c flour
• 2 tsp baking powder
• 12 tsp soda
• 2 Tbsp cocoa
• 14 tsp salt
• 1 tsp cinnamon
• 1 tsp vanilla
• 12 tsp nutmeg
• 12 tsp cloves
• 2 c raisins
• 1 c dates
• 1 c nuts

Directions

1. Mix first 4 ingredients set aside
2. Combine remaining ingredients and add to applesauce mixture
3. Dough will be thick Pour into well-greased loaf pans and bake at 350 for 1 hour
