Diabetic Fruit Salad

Ingredients

  • 1 20 oz can crushed unsweetened pineapple or fruit cocktail
  • 1 small pkg sugar-free gelatin
  • 2 3 oz pkg light cream cheese
  • 13 c pecans
  • 2 pkg low calorie whipped topping mix
  • 1 Tbsp lemon juice when using pineapple or lemon gelatin

Directions

  1. Drain fruit reserving juice
  2. In saucepan cook 1 cup reserved juice over medium heat stir in gelatin
  3. Beat cream cheese in warm mixture
  4. Fold in fruit
  5. Remove from heat chill in refrigerator until syrupy 45 minutes
  6. Fold pecans whipped cream topping and lemon juice if using pineapple into fruit mixture
  7. Pour mixture into 8-inch square pan
  8. Chill for 2 hours
  9. Cut into squares and serve
