Diabetic Lemon Pie

Ingredients

  • 4 egg yolks beaten
  • 12 tsp salt
  • 1 tsp grated lemon rind
  • 14 c cold water
  • 1 12 tsp Sweet N Low
  • 3 Tbsp lemon juice
  • 1 Tbsp unflavored gelatin
  • 4 egg whites

Directions

  1. Combine egg yolks Sweet N Low salt lemon juice and rind in top of double boiler about 5 minutes
  2. Soften gelatin in cold water and dissolve in hot mixture
  3. Cool
  4. Beat egg whites until stiff but not dry
  5. Fold into lemon and pour into a flaky crust and chill
