Diabetic Lemon Pie

Ingredients
- 4 egg yolks beaten
- 12 tsp salt
- 1 tsp grated lemon rind
- 14 c cold water
- 1 12 tsp Sweet N Low
- 3 Tbsp lemon juice
- 1 Tbsp unflavored gelatin
- 4 egg whites
Directions
- Combine egg yolks Sweet N Low salt lemon juice and rind in top of double boiler about 5 minutes
- Soften gelatin in cold water and dissolve in hot mixture
- Cool
- Beat egg whites until stiff but not dry
- Fold into lemon and pour into a flaky crust and chill
