Diabetic Persimmon Pudding

Ingredients

  • 1 c plus 2 Tbsp persimmon pulp
  • 1 egg
  • 1 tsp baking powder
  • 1 c flour
  • 12 c cinnamon
  • 1 12 c milk
  • 2 Tbsp butter
  • 12 tsp soda
  • 2 Tbsp sweetener and 1 tsp

Directions

  1. Mix pulp sweetener and egg
  2. Add dry ingredients and a little of the milk
  3. Blend well
  4. Add rest of milk and butter
  5. Bake 55 minutes at 325
