Dolmades
Ingredients
- 12 lb ground beef
- 1 onion chopped fine
- 2 cloves garlic chopped fine
- 1 tsp parsley chopped fine
- 2 tsp ginger chopped fine
- 1 heaping tsp curry powder
- 1 beaten egg
- 12 c currants
- 12 c toasted pine nuts or slivered almonds
- 1 c cooked rice
- salt and pepper to taste
- 1 pt jar grape leaves in salt brine
- juice of 4 limes
- 14 c olive oil
Directions
- Mix first 12 ingredients
- Spread out 1 grape leaf at a time Put 1 to 2 teaspoons of filling depending on leaf size at lower end of leaf about the bottom 14 of leaf
- Fold both sides into center and roll from bottom towards stem
- They should look like short fat cigars
- Place rolls in casserole barely covering with water and 13 of lemon juice
- Bake covered at 350 for 40 minutes
- Remove from oven and while still hot add remaining lemon juice and olive oil
- Refrigerate overnight
- Serve cold Makes about 35
