Double-Coated Chicken

Ingredients

  • 7 c Kelloggs Corn Flakes crushed to 1 34 c
  • 12 c all-purpose flour
  • 14 tsp pepper
  • 3 Tbsp margarine melted
  • 1 egg
  • 1 c skim milk
  • 12 tsp salt
  • 3 lb broiler-fryer chicken pieces washed and patted dry

Directions

  1. Measure cereal into shallow dish or pan
  2. Set aside
  3. In small mixing bowl beat egg and milk slightly
  4. Add flour salt and pepper
  5. Mix until smooth
  6. Dip chicken in batter
  7. Coat in crumbs
  8. Place in single layer skin side up in foil lined shallow baking pan
  9. Drizzle with margarine
  10. Bake in preheated 350 oven about 1 hour or until chicken is tender and juices run clear Do not cover pan or turn chicken while baking
  11. Makes 6 servings
