Double-Corn Muffins

Ingredients

  • 1 c all-purpose flour
  • 1 c yellow corn meal
  • 14 c sugar
  • 1 Tbsp baking powder
  • 12 tsp salt
  • 18 tsp ground red pepper
  • 1 c milk
  • 14 c butter melted
  • 1 large egg
  • 1 can corn drained

Directions

  1. Preheat oven to 425
  2. Grease 12 muffin pan cups
  3. In large bowl combine flour corn meal sugar baking powder salt and red pepper
  4. In medium bowl whisk milk butter and egg
  5. Stir into dry ingredients just until combined
  6. Stir in corn
  7. Spoon into prepared pans
  8. Bake 20 minutes
  9. Unmold and serve warm
  10. Makes 1 dozen
