Double-Corn Muffins
Ingredients
- 1 c all-purpose flour
- 1 c yellow corn meal
- 14 c sugar
- 1 Tbsp baking powder
- 12 tsp salt
- 18 tsp ground red pepper
- 1 c milk
- 14 c butter melted
- 1 large egg
- 1 can corn drained
Directions
- Preheat oven to 425
- Grease 12 muffin pan cups
- In large bowl combine flour corn meal sugar baking powder salt and red pepper
- In medium bowl whisk milk butter and egg
- Stir into dry ingredients just until combined
- Stir in corn
- Spoon into prepared pans
- Bake 20 minutes
- Unmold and serve warm
- Makes 1 dozen
