Double Good Blueberry Pie
Ingredients
- 34 c sugar
- 3 Tbsp cornstarch
- 18 tsp salt
- 14 c water
- 4 c blueberries
- 1 Tbsp butter
- 1 Tbsp lemon juice
- 1 9-inch baked pie shell
- whipped cream optional
Directions
- Combine sugar cornstarch and salt in saucepan
- Add water and 2 cups of blueberries
- Cook over medium heat stirring constantly until mixture is thickened and clear mixture will be quite thick
- Remove from heat
- Stir in butter and lemon juice Cool
- Place remaining 2 cups raw blueberries in pie shell
- Top with cooked berry mixture
- Chill
- Serve garnished with whipped cream
