Dried Fruit And Coconut Macaroons
Ingredients
- 1 c mixed dried fruit
- 2 c shredded coconut
- 12 c sugar
- 3 Tbsp flour
- 14 tsp salt
- 3 egg whites
- 1 tsp vanilla
- 1 c chopped walnuts
Directions
- Preheat oven to 325
- Lightly grease cookie sheet
- Coarsely chop the dried fruit
- In a medium bowl combine coconut sugar flour and salt
- Stir in the egg whites and vanilla
- Stir in the chopped fruit and walnuts
- Drop rounded teaspoonfuls of dough 1-inch apart onto the cookie sheet
- Bake for 15 minutes or until edges of the macaroons are golden
- Remove macaroons to cool Repeat with remaining dough
