Driskill HotelS Cheese Soup

Ingredients

  • 2 grated carrots
  • 4 c chicken stock
  • 1 small onion chopped fine
  • 14 c flour
  • 2 12 Tbsp cornstarch
  • 1 Tbsp fresh parsley
  • cayenne
  • pepper
  • 12 c butter
  • 2 chopped celery stalks
  • 2 lb Velveeta cheese cubed
  • 1 tsp salt
  • 18 tsp baking soda
  • 4 c milk
  • paprika for garnish

Directions

  1. Saute carrots celery and onion in butter
  2. Add flour and cornstarch
  3. Put vegetables in top half of double boiler
  4. Add milk and chicken stock
  5. Heat
  6. Add soda and cheese
  7. Stir until cheese has melted Add seasonings
  8. Serve hot topped with paprika
