Duchess Potatoes

Ingredients
- 10 medium baking potatoes, peeled
- 1/4 c. butter or margarine
- 1/4 c. milk
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 2 large eggs, lightly beaten
- 2 Tbsp. butter or margarine, melted
- paprika
Directions
- Cook potatoes in boiling water to cover 15 minutes or until tender.
- Drain and mash.
- Stir in butter and next 3 ingredients. Let cool 10 minutes.
- Stir in eggs.
- Spoon mixture into a large decorating bag fitted with a large star tip.
- Pipe 14 (2-inch) rosettes onto a lightly greased baking sheet.
- Drizzle with melted butter and sprinkle with paprika.
- Bake at 350° for 15 minutes or until lightly browned around the edges.
