Duchess Potatoes

Ingredients

  • 10 medium baking potatoes, peeled
  • 1/4 c. butter or margarine
  • 1/4 c. milk
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 large eggs, lightly beaten
  • 2 Tbsp. butter or margarine, melted
  • paprika

Directions

  1. Cook potatoes in boiling water to cover 15 minutes or until tender.
  2. Drain and mash.
  3. Stir in butter and next 3 ingredients. Let cool 10 minutes.
  4. Stir in eggs.
  5. Spoon mixture into a large decorating bag fitted with a large star tip.
  6. Pipe 14 (2-inch) rosettes onto a lightly greased baking sheet.
  7. Drizzle with melted butter and sprinkle with paprika.
  8. Bake at 350° for 15 minutes or until lightly browned around the edges.
