Duckling A LOrange

Ingredients
- 4 to 5 lb ready to cook duckling
- 2 unpeeled oranges quartered
- 1 clove garlic chopped
- 1 tsp salt
- 3 whole black peppers
- 12 c butter or margarine melted
- 14 c Burgundy
- 12 c orange marmalade Seville type
Directions
- Preheat oven to 425
- Stuff duckling with orange quarters garlic salt and peppers
- Truss
- Place duckling on rack in shallow roasting pan
- Brush top well with butter
- Pour Burgundy over and roast uncovered 30 minutes
