Duckling A LOrange

Ingredients

  • 4 to 5 lb ready to cook duckling
  • 2 unpeeled oranges quartered
  • 1 clove garlic chopped
  • 1 tsp salt
  • 3 whole black peppers
  • 12 c butter or margarine melted
  • 14 c Burgundy
  • 12 c orange marmalade Seville type

Directions

  1. Preheat oven to 425
  2. Stuff duckling with orange quarters garlic salt and peppers
  3. Truss
  4. Place duckling on rack in shallow roasting pan
  5. Brush top well with butter
  6. Pour Burgundy over and roast uncovered 30 minutes
