Easy Red Beans And Rice
Ingredients
- 1 lb chorizo sausage cut into bite size pieces
- 1 medium onion chopped
- 1 green pepper chopped
- 1 clove garlic minced
- 2 15 oz cans kidney beans drained
- 1 16 oz can tomatoes undrained and chopped
- 12 tsp dried whole oregano
- 12 tsp pepper
- hot cooked rice
Directions
- Cook sausage in large skillet over low heat until done
- Drain and reserve
- Add to skillet onion green pepper and garlic saute until tender
- Add beans tomatoes sausage and seasonings simmer uncovered 20 minutes or add to crock-pot and cook on low as long as desired
- Great for football parties
- Serve over rice Yields 4 to 6 servings
