Easy Spanish Rice

Ingredients
- 3 slices bacon
- 1 c white rice
- 12 c chopped onion
- 3 c V-8 juice
- 13 c chopped green pepper
Directions
- In skillet cook bacon until crisp
- Remove and crumble
- In drippings over low heat cook rice and onion until rice is browned and onion is soft stirring constantly
- Add V-8 juice and green pepper
- Reduce heat to low and cover
- Simmer 20 minutes or until rice is tender and liquid is absorbed
- Garnish with bacon
- Makes 4 cups
