Egg And Cheese Rarebit
Ingredients
- 12 lb Swiss cheese grated
- 1 Tbsp butter
- 1 c hot chicken broth
- 1 Tbsp grated onion
- 1 Tbsp chopped parsley
- dash of nutmeg
- 14 tsp salt
- 18 tsp paprika
- 4 eggs
Directions
- In top of double boiler over hot water melt cheese and butter until smooth
- Add chicken broth onion parsley nutmeg salt and paprika
- Beat eggs well then stir in and cook and stir over boiling water until smooth and thickened
- Serve on toasted English muffins or toast
