Egg Plant Parmigiana

Ingredients

  • 1 small eggplant
  • 1 Tbsp oil
  • 1 - 15 oz tomato sauce chunky italian
  • 1 c shredded mozzarella cheese
  • 2 Tbsp grated parmesan or romano cheese

Directions

  1. Peel eggplant
  2. Slice 12 inch thick and brush with oil Broil 3 to 4 inches from heat 6 to 8 minutes turning once
  3. Heat sauce spoon over eggplant and sprinkle with cheese
