Ingredients

  • eggplant
  • 14 c melted butter
  • 2 beaten eggs
  • 4 Tbsp flour

Directions

  1. Wash eggplant and cut in slices about 12-inch thick
  2. Peel slices and cut in chunks
  3. Boil in salt water until tender
  4. Drain very carefully in sieve
  5. Its impossible to get too dry
  6. Mash well
  7. To an average size plant add a little melted butter 14 cup 2 beaten eggs and 4 tablespoons flour
